    Traditional Scottish Carrot Soup

    Ingredients
    1 Chopped Onion
    1Lb Sliced or diced Carrots
    2oz Butter
    2oz Plain Flour
    I Pint of Chicken Stock
    1 Pint of Milk
    1 Orange (juice & rind)
    Salt & Pepper
    1 Teaspoon Nutmeg (optional)
    1 Ounce Chopped Parsley

    Method
    Melt the butter and add the onions and carrrots,cook gently (without colouring) then stir in the flour and cook for a further 1 minute. Gradualy add the milk and chicken stock,season with sallt,pepper and nutmeg.
    Bring to the boil stirring CONSTANTLY then simmer for 20/30 minutes, add the orange juice and rind.....sprinkle with parsley..........

    Hello Big Wull
    I will try that recipe for soup, need it at the moment.
    My brother was snowed in up in Co. Durham, his teenage children could not go to school in the village from their farmhouse as the school was closed because of the snow. My brother walked the little one 1and a half miles to the village school and walked back in a blizzard. Down south things have not been bad, just snow flurries and not lying for very long. Just off to have some lunch.
    Had hot porridge this morning, one of the delights I carry over from Scotland :wink:
